Despite the name, the Boston Butt Roast doesn’t come from the rear—it actually comes from the upper shoulder of the hog, right above the picnic roast. This cut is known for its perfect balance of tenderness and fat, making it ideal for slow cooking into juicy pulled pork, mouthwatering carnitas, or a rich roast to feed a crowd.
